Driscoll’s Strawberry Chicken Hoison Salad Recipe And A Giveaway

More fun for National Berry Month! Today I’ve got some facts and a recipe on my favorite berry – the strawberry.

Strawberry Chicken Salad with Hoisin-Sesame Dressing
This recipe makes extra dressing to have on-hand. Just add strawberries and the remaining ingredients for an easy side or main dish salad in a hurry.
Prep time: 20 minutes
Makes 6 servings
- 1 package (16 ounces) Driscoll’s Strawberries
- 12 ounces cooked smoked chicken breast,
- 8 ounces (about 8 cups) mixed baby greens, washed and dried
- 3/4 cup jicama, cut into julienne strips
- 3/4 cup fennel, thinly sliced
- 2 green onions, sliced
- 1/2 cup Hoisin-Sesame Dressing (recipe below)
Rinse, hull and slice or quarter strawberries.
Combine strawberries, chicken, greens, jicama, fennel and green onion in a large bowl. Drizzle with dressing (about ½ cup) and toss gently until evenly mixed.
Hoisin-Sesame Dressing
1/2 cup vegetable oil
1/4 cup rice vinegar
1/4 cup light soy sauce
2 tablespoons granulated sugar
1 tablespoon Hoisin sauce
1 tablespoon toasted sesame seeds
1 1/2 teaspoons sesame oil
1 1/2 teaspoons Dijon mustard
1 1-inch piece ginger, peeled and chopped
1 medium shallot, peeled and chopped
1 clove garlic
Fresh ground pepper to taste
Place all ingredients in a blender or food processor. Blend until smooth. (Or, grate the ginger and mince the shallot and garlic then whisk all ingredients together.) Refrigerate in a covered container.
Makes about 1-1/3 cups.
Nutrition Per Serving: 221 calories, 10.16g total fat, 1.23g saturated fat, 19.75g protein, 13.18g carbohydrate, 48.23mg cholesterol, 3.81g fiber, 221mg sodium
