Driscoll’s Strawberry Chicken Hoison Salad Recipe And A Giveaway

| Thu 07-23-09

More fun for National Berry Month! Today I’ve got some facts and a recipe on my favorite berry – the strawberry.

Strawberries

How can anyone resist a fresh, juicy strawberry? The fragrantly sweet juiciness and deep red color of Driscoll’s Strawberries brighten up both the taste and aesthetics of any meal. Not only are they easy on the eyes and tastebuds, strawberries are easy on the health too!

Rich in nutritional vitamins and antioxidants, Driscoll’s Strawberries are one of the most health-conscious berries around. Just a one-cup serving of the beautiful red berry provides 93% of the suggested daily supply of Vitamin C, 16% of the suggested daily supply of Fiber and 20% of the recommended daily supply of Folic Acid. Not to mention the added benefits of Iron and Calcium.

Furthermore, strawberries are loaded with phenols (antioxidants), making the berries heart-healthy, anti-carcinogenic and anti-inflammatory.

Enjoyable a la carte, or paired with your favorite foods, Driscoll’s Strawberries fit into any and every meal:

For breakfast, top a bagel and cream cheese with sliced, fresh Driscoll’s Strawberries or stir Driscoll’s Srawberries into pancakes, muffins and quick breads. Or, just hold the strawberry “handle” and dip them into chocolate or yogurt!

At lunchtime, slice Driscoll’s Strawberries into your PB&J or toss them into your spinach salad.

For a heart-healthy dessert, drizzle a tablespoon of high quality balsamic vinegar over a cup of sliced Driscoll’s Strawberries. Then, top with chopped walnuts for added heart-beneficial omega-3 fatty acids.

A one-cup serving of strawberries provides:

Strawberry Chicken Salad with Hoisin-Sesame Dressing
This recipe makes extra dressing to have on-hand. Just add strawberries and the remaining ingredients for an easy side or main dish salad in a hurry.

Prep time: 20 minutes
Makes 6 servings

  • 1 package (16 ounces) Driscoll’s Strawberries
  • 12 ounces cooked smoked chicken breast,
  • 8 ounces (about 8 cups) mixed baby greens, washed and dried
  • 3/4 cup jicama, cut into julienne strips
  • 3/4 cup fennel, thinly sliced
  • 2 green onions, sliced
  • 1/2 cup Hoisin-Sesame Dressing (recipe below)

Rinse, hull and slice or quarter strawberries.

Combine strawberries, chicken, greens, jicama, fennel and green onion in a large bowl. Drizzle with dressing (about ½ cup) and toss gently until evenly mixed.

Hoisin-Sesame Dressing
1/2 cup vegetable oil
1/4 cup rice vinegar
1/4 cup light soy sauce
2 tablespoons granulated sugar
1 tablespoon Hoisin sauce
1 tablespoon toasted sesame seeds
1 1/2 teaspoons sesame oil
1 1/2 teaspoons Dijon mustard
1 1-inch piece ginger, peeled and chopped
1 medium shallot, peeled and chopped
1 clove garlic
Fresh ground pepper to taste

Place all ingredients in a blender or food processor. Blend until smooth. (Or, grate the ginger and mince the shallot and garlic then whisk all ingredients together.) Refrigerate in a covered container.
Makes about 1-1/3 cups.

Doesn’t that sound interesting?! I never would have thought to add strawberries to something like chicken salad. Want to try making some? I’ll give you the strawberries, courtesy of Driscoll’s of course.
